These dosas or Pancakes are a slight variation to the "Sweet Semolina Pancakes" or "Rulava Dhoddak" which has already been published on my blog.
In my childhood, I did not like the sweet version of pancakes, so my Mom created this savory version and called it " Instant Tomato Omlette"(without eggs).
Serves 3
Ingredients:
Semolina or Rava - 3 cups
Green chillies - 2
Ginger - 2 inch
Onion - 1
Atta or wheat flour - 1 tbsp
(incase of non-availability of both, any refined flour can be used - purpose is binding)
Grated coconut or dessicated coconut - 1 cup (optional)
Tomato - 1
Salt - 1 tsp
Method:
Finely chop green chillies, ginger, tomato and onion and keep aside (alternately you could coarsely grind them in a hand blender).
Take a large bowl, add the semolina or Rava, green chillies, ginger, wheat flour, grated or dessicated coconut, tomatoes, onions and salt and mix well. Add little water just enough to bind all the ingredients.
Now place a griddle or tawa on the stove, and let it heat up well.
Now spread one laddle full of the semolina batter and roughly bring it to a shape of pancake.
The batter is thick so it will not spread like other dosas, you just need to spread it evenly like a dosa.
Add a lilttle olive oil or ghee on all sides and cover for 1 minute.
Now turn it over, and add little ol or ghee again,
Allow it to become golden and crispy.
"Rulava Tomato Dhoddak" or "Eggless Tomato Omlette" is ready.
Serve with Mint Chutney.
