Idlis - A Traditional South Indian Breakfast

"Idli" the most popular South Indian breakfast. However, due to its popularity, idlis are now available everywhere in India and also in Indian restaurants all over the world.
Here is the traditional Idli recipe.
Below are given 2 variations, the end result is however almost the same, ie soft, fluffy idlis.


Variation 1 : Using Parboiled rice
Variation 2 : Use rice semolina or Idli Rawa


Variation 1 : Using Parboiled rice
Ingredients :
Parboiled rice - 3 cups
Urad dal or split black gram - 1 cup
Salt to taste
Oil for greasing


Method :
Wash and soak the rice and urad dal in lukewarm water for about 3 hrs.
Wash, drain and grind to a smooth paste.
Cover and keep aside.
Let it ferment overnight.
Grease the idli moulds.
Put one tablespoon each of the batter into the moulds and steam for 15 mins.


Variation 2 : Use rice semolina or Idli Rawa
Ingredients : 
Rice Semolina or Idli Rawa - 2 cups
Urad dal or split black gram - 1 cup
Salt to taste
Oil for greasing
Method :
Wash and soak the urad dal in lukewarm water for about 3 hrs.
Wash, drain and grind to a smooth paste.
Now add Idli Rawa and mix well.
Cover and keep aside.
Let it ferment overnight.
Grease the idli moulds.
Put one tablespoon each of the batter into the moulds and steam for 15 mins.
Serve hot with Coconut Ginger Chutney or Sambhar.
