This spicy, sweet, fruity blend of fresh ingredients will turn any dish into an exciting new favorite.
It tastes great with grilled vegetables, fish or meat, but I make it mostly as an evening snack.
Mango - 1 - peeled and diced
Spring onion - 2 - green part and white part chopped separately
Pickled Jalapeno - 2 - chopped ( optional)
Red bell pepper - 1/2 diced
Coriander leaves chopped - 1 tbsp
Parsley chopped - 1 tbsp ( optional)
Olive oil - 1 tbsp
Lemon juice - 1 tsp
Take a shallow pan, add olive oil and fry the red bell pepper cubes and the white part of the onions till they are soft about 5 mins.
Now take a large bowl, add the mango cubes, the green part of the onion, coriander, jalapeno, parsley, and lemon juice and mix well.
Add the fried red pepper and onion and mix well.
Serve after chilling for atleast 15 mins.
