Pal Payasam (Milk Kheer /Dessert)

"Pal Payasam" or "Milk Kheer/Dessert" is a traditional dessert made by the people of Kerala, on their New Year day " Vishu".
This is almost the same dessert known as "Kheer" in North India and also known as "Doodh Paak" in Coastal Karnataka.
"Pal Payasam" as such I learnt from my ex-boss and now a very good friend. She used to make large quantities of this dessert and bring to our office on Vishu ( Kerala New Year) and distribute to our enitre team of almost 50.
This dessert is very simple to make.


Ingredients:
Milk - 1 liter
Sugar - 1 cup
Rice - 1 handful
Green Cardamom/Elaichi - 4


Method:
Wash rice and keep aside.
Now take a cooker or heavy bottomed pan, add milk, sugar, rice and finely crushed green cardamom and boil till the rice is cooked.
Serve hot.
Optionally you could garnish with roasted dry fruits, although the traditional "Pal Payasam" has only cardamom flavor and no dry fruits.
