Charmuri Upkari (A Healthy Evening Snack made with Puffed rice)

Puffed rice are puffy rice kernels that have been steam-pressured.
Puffed rice is low in fat, and high in carbohydrates so is a healthy snack for the evening. Here is a puffed rice evening snack that is famous in Mangalore and surrounding regions. This snack is especially sold in food stalls during local festivals and food fete's across Mangalore.An easy to make, healthy snack just right for the evening.

Serves 2
Ingredients:

Puffed rice - 2 cups
Onion - finely chopped - 1
Green chillies - finely chopped - 1/2 tsp
Raw Mango grated - 1 tsp or Lemon juice - 1 tsp
Red Chilli powder - 1/2 tsp
Salt to taste
Olive Oil - 1 tsp ( Use coconut oil for authentic taste)
Chopped Coriander leaves to garnish
Method :


Puffed Rice or Charmuri
Its very essential that the puffed rice is crispy.
But normally puffed rice gets soft very easily.
To make it crispy, either keep the puffed rice in a mircowave for about 2 mins, and let it cool for 2 mins. The puffed rice gets crispy.
Alternatively you could fry the puffed rice in a large pan on low heat stirring continuously for abt 2 mins and let it cool. The puffed rice will become crispy( please do not add any oil).
When the puffed rice is crispy, take a large bowl. Put the oil, add onions, salt, chilli powder, green chillies and raw mango or lemon juice and mix well.
Now add the puffed rice and mix well.
Serve garnished with chopped coriander leaves.
Best eaten with a "Hot Cup of Ginger Tea" or "Kabba Rosu" meaning Sugarcane Juice.
