Potatoes as a good source of vitamin B6, vitamin C, copper, potassium, manganese, and dietary fiber.
Potatoes also contain a variety of phytonutrients that have antioxidant activity.
Research has proved that although potatoes are high in carbohydrates, its better to eat complex carbohydrates like potatoes than eat simple carbs like sugar and biscuits.

Ingredients:
Potatoes - 2
Red chilly powder - 1 tsp
Potatoes - 2

( you can increase or decrease the quantity according to your palate -
I have put more red chilly powder than mentioned here cause we like it that way.)
Salt to taste
Oil - 1-2 tsp ( You can also use ghee for better nutrition for smaller children)
Method:
Finely cut the potatoes into thin slices or as desired. The whole potato could be sliced thinly or the potato could be halved and the sliced. That I leave to you to decide.
But remember thinner the slices, faster they cook.
Remove all water content from the slices by keeping on kitchen towel.
Take a heavy bottomed pan, anodized or non-stick. Non-stick is good for those who have the fear that the potatoes will stick to the bottom of the pan.
Keep the pan on medium heat, add oil, after about 10 seconds, add the red chilly powder, and salt, fry for a few seconds, then add the sliced potatoes and mix well.
