Cream of Mushroom Soup

Mushrooms are low in calories, fat-free, cholesterol-free and very low in sodium, yet they provide important nutrients. Here is an easy to make and healthy mushroom soup which my family loves.
The health benefits of mushroom include relief from high cholesterol levels, cancer and diabetes. It also helps in weight loss and increasing immunity. 
Hence its good to add a serving of fresh mushrooms to your daily diet to get important nutrients.
Serves 3
Ingredients:

Mushrooms - 200 gms - sliced
Onion - 1 - sliced
Garlic - 2 cloves - sliced
Thyme - fresh - 2 tsp or dry - 1 tsp
Cream - 1/2 cup
Black Pepper - 2 tsp

Olive oil - 1 tbsp
For garnishing:
Croutons/fried or re-baked bread cubes
Mint/Coriander leaves
Cream - 2 tbsp
Black Pepper


Method:
Take a heavy bottomed pan, keep on low heat, add olive oil, fry the sliced onions, garlic and thyme till the onions are translucent.
Now add the sliced mushrooms and fry for about 5-8 minutes on medium heat.
Now add 250 ml water and cover and cook for 10 minutes.
Allow to cool.
Blend the contents in a blender.
Transfer back to the heavy bottomed vessel, add cream, ground black pepper and salt. Mix well and bring to boil.
Serve hot garnished with croutons, fresh cream and mint/coriander.
