This chutney can be stored in the refrigerator for about 2 weeks and can even be frozen for upto 3 months and used as required.

Ingredients:
Dates or Khajur - 2 cups - deseeded
Tamarind or Imli - 1/4 cup - deseeded
Grated Jaggery or Gur - 1 cup
Red chilli powder - 1 tsp
Asafoetida or Hing - 1 pinch
Salt to taste
Method:
Wash the dates and tamarind and put them in a heavy bottomed pan and then add the jaggery, chilli powder, asafoetida, salt and 4 cups of water and simmer for 20 to 25 minutes.
Cool and strain the mixture through a sieve.
Use as required. Store refrigerated.
You can also blend the chutney in a food processor and then strain it.
