This tomato curry called "Tomate Phanna Upkari" in konkani is one of the easiest curries to make.
I call it all purpose since it goes well with almost anything...Indian breads like Phulkas/Chapatis/Rotis, Dosa, Idli and Indian noodles like Shavige/Idiappam and even Rice.
A traditional konkani dish, but still not very popular among all konkanis.This is a traditional dish mostly cooked in my maternal family.
Serves 3
Ingredients :
Tomato - 6
Onion - 3
Red Chilli powder - 2 tsp or as per taste
Oil - 2 tbsp
Salt to taste
Optional :
Coriander leaves for garnishing
Method :
Finely chop the onions and keep aside.
Blanch the tomatoes in boiling hot water for abt 2 mins.
Then de-skin them, and puree them.
Take a deep frying pan, put it on medium heat, add oil, and when its slightly hot add the chopped onions and fry till golden light brown.
Then add red chilli powder, fry lightly ( do not allow to burn ), ideal time should be less than 3-5 secs.
Immediately add the tomato puree and salt and bring to boil for about 5 mins.
The Tomato curry is ready.
Serve it with any kind of bread or rice.
Optionally you could garnish with coriander leaves.
Waw! I will try this. Seems so easy. But onion is not liked very much in my house..But will try this one.
