Potato popularly known as "Aloo" is my most favorite vegetable, and I know most of my friends too love Aloo.
For me Aloo means "comfort"
Since this is a very easy and quick dish, it can be eaten as a side dish with roti when you are back from office and cant find any vegetable except potato.
( Trick is boil aloo and keep in the refrigerator ).Also a quick healthy snack for the evening.
Ingredients :
Potatoes - 4 medium sized
Jeera /Cumin - 1 tsp
Asofoetida /Hing - 1/2 tsp
Red Chilli Powder - 1 tsp
Coriander Powder - 1 tsp
Rock Salt powder - 1 tsp
Chat masala - 1 tsp
Fresh coriander leaves
Fresh Parsley
curds - 2 cups - 500 gms
Ghee or refined oil or Olive oil - 2 tbsp
Salt to taste
Optional ingredients :
Garam masala powder - 1 tsp
Onion - 1 finely chopped
Coriander Mint Chutney
Method :
Boil and peel the potatoes and cut them into small bite sized cubes.
In a pan/kadai , put the ghee or oil and when its lightly warm add Cumin and as soon as it splutters, and all the other spice powders ( garam masala being optional ).
Within a few secs add the potato cubes ( make sure the dry masalas or jeera dont burn ).
Then fry the potatoes in the masala for abt 8-10 mins, add salt to taste and coriander leaves. Fry till the potatoes are lightly crispy as shown below.
Cool for abt 10 mins.
In a separate bowl, whisk the curds with a lil salt. Put the potato mix on the curds and garnish with parsley, red chilli powder , chat masala and a tsp of coriander mint chutney.
Optionally you can add finely chopped onions too.
Aloo Raitha is ready.
