Dish #435 - Beetroot n Paneer cutlet
Here's a snack made from Beetroot and Paneer or Cottage cheese, which is not only healthy but also delicious.
Beetroot is not our favorite vegetable but due to its gaining popularity as the new super food that beets and beetroot juice can improve athletic performance, lower blood pressure and increase blood flow, I have been trying to incorporate beets in our diet.
Paneer or Cottage cheese is high source of protein and keeps you feeling full for a couple of hours...

Paneer Tikka (Grilled Cottage Cheese)
There are many ways to make Paneer Tikka but this is my way of making tikka in the fastest possible way.
I have used a gas barbeque to grill the paneer.
But you can you use any kind of barbeque or grill.
The ingredients however remain the same.
You could grill capsicum, tomatoes or even pineapple chunks along with the paneer.
I made grilled only red onions with paneer since my daughter likes them. We mostly make it as a late evening snack, rather than a meal starter.

Mutter Paneer (Green Peas with Cottage Cheese)
Mutter Paneer or Green Peas with Cottage cheese, a North Indian delicacy and a big favourite at home.
The best mutter paneer I've had till now was in a Dhaba or Roadside Shack, while driving from Patna to Darjeeling. We accidentally stopped by this place, cause the gas station guy filled "petrol" in our "diesel" car and had to be repaired. Yet the journey was very good, thanks to the lovely weather and the lovely Mutter Paneer.
The Mutter paneer was so delicious with freshly made phulkas (Indian bread), I can never forget the taste.

Paneer Burji (Scrambled Cottage Cheese)
Another Paneer dish, which is easy to make....
wondering why I am posting another paneer dish so soon, cause I know most of us love Paneer especially kids.
I remember having this dish, every other day in the Punjabi Dhaba near my workplace in 2003-2004.
We were a big group of collegues who used to haunt this place for buttery aloo paratas which were served with Paneer Burji.
On one such days, I ventured into their tiny kitchen to see how this was made.
They used lot more chillies than I have done in the recipe, but trust me it tastes great even with those extra green chillies.

Quick n Easy Peppy Paneer
I remember in my childhood that the best thing about getting back home after school, was my seeing my mom's smiling face when she opened the door ready to greet me.
The next best thing was the lovely aroma of the evening snack.
There are loads of evening snacks which my mom made which I will be posting shortly.
I however have continued this tradition of making different snacks for my daughter when she returns from school.
On one such day I realized not having anything else in the refrigerator except Paneer.
So created, an evening snack of Paneer, in Indo-Italian style.
After eating this felt really pepped up so called it "Peppy Paneer"

Palak Paneer (Cottage Cheese with Spinach)
Paneer, is known as "Cottage Cheese" in English.
Cottage Cheese really is cheese. The difference with cottage cheese is that milk is curdled and drained instead of being processed or aged.
Hence cottage cheese is higher in protein, and is good for people who have early dinner.
Also, good to pack in lunch boxes when you know you'll have a long time between meals.
Learnt this dish, from a friend.
Palak Paneer is best served with Rotis.
