Rajasthani Mirchi Vada - Deep fried stuffed green chillies

Monsoons are the perfect time to indulge in some fried food.
The weather is just so lovely here in Bangalore, that I think of making some snack for the evening.
Recently I learnt this variation of the regular "Mirchi Bajji", called Mirchi vada..which is a Rajasthani snack or dinner starter/accompaniment.
Made this today, and my family just loved it...

Serves 4
Ingredients:
Big green chillies - 8
For the filling
Potato - 1 large
red chilly powder - 1 tsp
coriander leaves - 1 handful - chopped
Salt to taste
For the batter
Gram flour - 1 cup
Turmeric powder - 1 tsp
Salt to taste
Water as required
For deep frying
Oil - as required
To serve
Mint chutney or sweetened curds/yoghurt

Method:
Slit the green chillies and remove the seeds.

Now boil the potatoes, peel them, and mash them along with coriander leaves, salt and chilly powder.

Now fill each slit green chilly with this potato mixture.

Make a thick batter using gram flour, salt, turmeric and water, batter should be of dosa batter consistency.

Deep fry the batter dipped stuffed green chillies in hot oil until golden.

Drain on absorbent kitchen towel, and serve hot with Mint chutney or sweetened yoghurt/curd.
