Prawn Ularthiyathu - Kerala Style prawns


"Prawn Ularthiyathu" is a Kerala Style prawn starter, that I learnt from a renowned Chef, during our recent kerala road trip vacation.
A simple yet mouthwatering starter that could just make any dinner truly yummy...!!!


Serves 3
Ingredients:
Prawns - cleaned and de-veined - 500 gms
Onion - 1 - chopped
Garlic - 2 cloves - sliced lengthwise
Green chilly - 4 - chopped
Ginger - 2 inch - sliced lengthwise
Curry leaves - 1 handful
Tomato - 1 - small - chopped
Kashmiri Red chilly powder - 2 tbsp ( this is a very mildly spiced chilly powder that gives some color)
Turmeric powder - 1 tsp
Coriander powder - 1 tbsp
Fennel powder - 1 tsp
Garam masala powder - 1 tsp
Salt - to taste
Coconut oil - 2 tbsp ( this gives authentic taste but any other refined oil or butter could also be used)

Method:
Clean and wash the prawns and drain off any excess water and keep aside.
Take a heavy bottomed pan, keep on low heat, add oil, then the ginger, garlic, green chillies, curry leaves, onions and saute' till golden brown.
Add the chopped tomatoes, salt, chilly powder, turmeric powder, coriander powder and fennel powder.
Saute' till tomatoes become soft.
Add the prawns and mix well till prawns are cooked, ie saute' for 3-5 minutes only.
Add garam masala powder, mix well and serve hot.
