Sweet Moong dal khichdi - A Konkani delicacy


Sweet Moong Dal Khichdi is a Konkani delicacy that is normally made during festivals.
Its easy to make.... 
The khichdi could be served in bowls or spread on a plate and then cut into cubes.
Best served with ghee...
My Mom is an expert at making this, and recently I learnt from her.


Serves 5
Ingredients:
Moong dal (Moong bean split and deskinned) - 1 cup
Rice ( any white rice) - 1 cup
Jaggery - 2 cups
Water - 4 cups
Coconut grated fresh/desiccated - 1 cup
Elaichi/Green cardamom - peeled and seeds powdered - 1 tsp
Ghee/Clarified butter - 1/4 cup

Method:
Take a heavy bottomed pan, keep on medium heat and fry the moong dal till it gives a nice aroma.
Now switch off the heat and allow to cool.
Take another vessel, wash the fried moong dal and the rice and drain.
Add 4 cups water to this moong dal and rice and cook in cooker for about 10-15 minutes till soft.
Now take a heavy bottomed pan, keep on medium heat, add jaggery and allow to melt, then add the coconut, cooked rice and moong dal, ghee and green cardamom powder, and keep stirring and mixing till all the ingredients are well combined and thick.
You can switch off the heat, once the ghee begins to separate.
Serve it immediately or take a plate, grease it will ghee and put this ready khichdi and set it evenly.
Cut into square or diamond shapes.
And serve with lots of ghee...!
