Dish #422 - Lemon Butter Lamb Chops with Pumpkin puree
For the last couple of weeks I have been trying to create some dishes which are simple to cook, tastes delicious, is healthy, look very beautiful, .and a complete meal in itself...
This is the first of them...
Pumpkin is a very low calorie vegetable. 100 g provides just 26 calories and contains no saturated fats or cholesterol; however, it is rich in dietary fiber, anti-oxidants, minerals, vitamins. The vegetable is one of the food items recommended for controlling cholesterol and reducing weight.

Panzanella - An Italian Salad
"Panzanella" or "Panmolle" is an Italian (Florentine) salad of bread and tomatoes. It includes chunks of soaked old bread and tomatoes dressed with olive oil and vinegar and some basil. Sometimes cucumbers and onions are also added.
Whenever I have traveled to Europe, I've always had "Panzanella" since its not just healthy but also filling due to the bread in it...
Of course nowadays this salad is available in all Italian restaurants in India.
And its easy to make at home too....
This is a meal in itself..... especially when you are alone and do not want to put much effort into cooking an entire meal.

Methi Paratha or Indian Bread rolled with Fenugreek leaves
"Methi Paratha" or Indian bread rolled with Fenugreek leaves is a very healthy meal, you could have it for breakfast, lunch or dinner... you will love it... especially when served with butter, green chilly pickle and curds.
Methi or Fenugreek leaves are very good for health, as they are rich in anti-oxidants, iron and fibre.
These parathas are a good way to include them in your daily diet.

"Bisi Bele Bath" or Seasoned Rice, lentils and vegetables
"Bisi Bele Bath" is a very popular rice dish in Karnataka especially in Bangalore, Mysore and surrounding places. BisiBeleBath is a meal in itself.
This dish is very healthy as it has the perfect balance of rice, lentils, vegetables and some spices.
This dish is best eaten with spicy potato chips but today I have garnished it with "Khara Boondi"/Savory Boondi just the way its served in most hotels/restaurants in Bangalore.
Boondi is a fried Indian snack made from Chickpea flour.
The bisibelebath recipe which I have put down here is made using home made bisi bele bath powder or masala.
But if you do not want to go thru the trouble of making this yourself, you could buy the powder from any grocery store.
I would however recommend MTR Bisi Bele Bath powder.
My Mom is an expert in making this, and infact both my daughter and I, love her preparation, but over the years I too am able to make it quite as tasty as she makes... well almost..!!

Stumbler (Scrambled Eggs over Roasted Bread Bites)
"Stumbler" or "Scrumbler" is nothing but scrambled eggs over roasted bread bites.
This is a very popular dish which is a complete meal in itself, in most parts of Mangalore and surrounding areas.
I had completely forgotten about this recipe, until last week when a friend of mine reminded me about how we all used to love this during our childhood days.
Even today if you pass through certain areas in Mangalore,
all you can hear is "One plate Stumbler please....."
I made this today and my daughter who does not really like scrambled eggs, loved this cause of the crispy bread in it.
Try this am sure you'll love it too....!
