Crumb Fried Red Snapper with Grilled Baby Potatoes


 A complete meal ...Crumb fried Red Snapper with Grilled baby potatoes....
You could use Salmon fillets instead of Red snapper....its equally good...

Makes 4 fillets
Ingredients:
Red Snapper or Salmon fillets - 4
Bread crumbs - 1 cup
Red chilly flakes - 1 tbsp
garlic cloves - 4 - finely chopped
Oregano - 1 tbsp
Salt to taste
Baby potatoes - as many as u like - pricked several times with a fork 
Olive oil - 1 tbsp + 1 tbsp - for marination
Oil - for frying

Method:
Take a bowl, add 1 tbsp olive oil, salt, red chilly flakes, oregano and chopped garlic and mix well.
Now apply this marinade evenly to the fish fillets and allow to marinate for atleast 1 hr in the refrigerator.
Meanwhile marinate the baby potatoes in 1 tbsp of olive oil and salt and keep aside.

For frying:
Cover each fillet with bread crumbs and fry till golden brown.
You could either shallow fry or deep fry as per your choice.
Meanwhile grill the potatoes in an oven for 15-20 mins at 200 degrees Centigrade.
Serve hot.
