Dish #432 - Pan fried Salmon with Mushroom Sauce and Broccoli


Salmon is an excellent source of vitamin B12, vitamin D, and selenium. It is a good source of niacin, omega-3 fatty acids, protein, phosphorus and vitamin B6. Eating salmon is beneficial in the treatment of osteoarthritis and other inflammatory joint conditions. Consuming salmon regularly has been associated with reducing the risk and incidence of depression. It also increases your cardiovascular health.
Simple pan-fried salmon is not only easy to make but also healthy.

Ingredients:
Salmon fillet - 6 - about 100 gms each - with skin on one side
Mushrooms - 200 gms
Broccoli - 200 gms
Garlic - 5 cloves
Thyme - 1 bunch fresh or 1 tbsp. dried
Salt and Pepper to taste
Olive oil
Red wine vinegar or any other vinegar as desired - 2 tbsp
Vegetable or Chicken Stock or water - 1/2 cup


Method:
Marinate the salmon fillet with salt and pepper.
To make the mushroom sauce - Take a shallow pan, add olive oil and lightly sauté the garlic and thyme along with the mushrooms, till mushrooms are soft and glazy. Add salt and pepper and add the vinegar and stock or water and bring to boil. Allow to cool a bit and then puree to form the mushroom sauce.  
Preparing the Broccoli - Par boil the broccoli in slightly salted water, drain and sauté in a shallow pan with olive oil for 30 seconds.
To Pan fry the Salmon - Take a pan, keep on medium heat, add olive oil, keep the salmon fillet skin side down and fry for 1 minute, turn the fillet and fry again for couple of minutes or till done.
Serve the Salmon fillet topped with mushroom sauce and broccoli.
