Thai Prawn Rolls

"Thai Prawn Rolls" a quick, easy and healthy roll which I often make on weekends.
The roll is full of flavor and freshness.
Try making it and am sure you will love it just the way we do...

Makes 6 rolls
Thai rice sheets - 10 to 12 ( Use 2 sheets per roll for better grip) (available in any store)

Prawns - 250 gms - cleaned
Green pepper - 1 - cubed
Thai red chilly paste/sauce - 1 tbsp
Salt to taste
Oil - 1 tsp
Carrot - 2 - peeled - cut into long pieces
Cucumber - 2 - peeled - cut into long pieces

Lettuce - 1 bunch

Take a deep frying pan or wok, add oil , keep on high heat, fry the green peppers for 2-3 minutes, then add in the thai red chilly paste/sauce and fry for 30 minutes, then add the prawns for 2-3 minutes till done.
Switch off the heat and keep aside.

Now dip set of 2 rice sheets in watet for 4-5 seconds, the dry then on a towel for 1 minute.
Then add all the salad ingredients and the prawns , roll and serve.
