"Baingan Bhartha" or Char grilled Eggplant Mash Saute'd in Indian Spices


"Baingan Bhartha" is a side-dish made from Char grilled Eggplant. Its one of our favorite side-dish for Roti or any other Indian bread.
This dish is not just easy to make and lip smackingly delicious... it also is packed with nutrients.
Eggplant is loaded with vitamins and minerals, but its health benefits extend beyond just adding vital nutrients to a meal. Eggplant contains other compounds that promote good health as well, even to the point of helping to prevent cancer and lowering cholesterol. Once you realize how beneficial eggplant is to your health, you may want to give more consideration to it becoming a regular part of your diet.

Serves 3:
Ingredients:
Eggplant - any variety - 1 large
Onion - 1 - finely chopped
Ginger - 1 inch piece - finely chopped
Garlic - 4 cloves - finely chopped
Green chilly - 2 - finely chopped
Tomato - 1 - finely chopped
Cumin seeds - 1 tsp
Coriander powder - 1 tsp
Cumin powder - 1 tsp
Garam masala powder - 1 tsp
Turmeric powder - 1 tsp
Salt to taste
Ghee or oil - 1 tbsp 

Method:
Roast the eggplant on open flame or on a grill in an OTG will char grilled and roasted.



Peel the char grilled eggplant, mash it and keep aside.




Take a heavy bottomed pan, keep on low heat, add ghee, then the cumin seeds and allow to crackle. Now add in the chopped onions and fry for few minutes till onions become soft and translucent.
Now add the ginger, garlic and green chillies and fry for 30 seconds.
Then add the turmeric powder, coriander powder, cumin powder, tomatoes and salt and fry till ghee or oil begins to separate.
Then add the mashed eggplant, garam masala and mix well.
Saute' for about 2-3 minutes and switch off the heat.
Garnish with chopped coriander leaves and serve hot.
