"Biskut Ambado" or Urad dal Vada or Urad Dal fritters

The weather is so lovely these days, drizzling, cool and oh so beautiful.
On such days I love to make something special as an evening snack especially on weekends when everyone is at home.
So today I made these gorgeous Urad dal Vadas or fritters popularly known as "Biskut Ambado" in Coastal Karnataka by the Konkanis.
This is best eaten with Ginger and Green Chilly Chutney.


Makes 25
Ingredients:
Urad dal - 1 cup
Asafoetida or Hing - 1 tsp
Green chillies - 4 - finely chopped
Ginger - 2 inch - finely chopped
Fresh or desiccated Coconut - tiny pieces - 1 tbsp (Optional)
Salt - 1 tsp
Rice flour - 1 tbsp(Optional - but this ingredient makes it crispy)
Oil - for deep frying


Method:
Soak the urad dal in water for atleast 2 hours. Rinse and keep aside.
Grind the urad dal into a thick paste without adding water or if required only with 1-2 teaspoons of water.
The urad dal should be ground well but need not be too smooth (like idlis are dosas).
Now remove the urad dal batter into a big vessel, add salt, hing or asafoetida, rice flour, green chillies and ginger and mix well, preferably with hand.
Now take a heavy bottomed deep frying pan, add oil and keep on medium heat.
Once the oil is really hot, add dollops of the batter with your hand into the oil.

Deep fry till golden and crisp.
Serve hot with Ginger and Green chilly Chutney.
