Puliyogare or Tamarind Rice


'Puliogare' is simple "tamarind rice"....
Its a south Indian delicacy and a meal in itself...

The easiest way to make "Puliyogare" is to make the "gojju" or paste before hand and store in the refrigerator and use it whenever required.


Ingredients:
Tamarind - 1 lemon sized ball
Water - 3 cups
Jaggery - 3/4 cup
Rasam powder - 5 tbsp
Salt - 2 tbsp
Black sesame seeds - 75 grams 
oil - 3/4 cup 

Method to make Puliyogare Gojju recipe:
Wash and soak the tamarind in 3 cups of water overnight or boil the water and soak the tamarind for 3 to 4 hrs. Extract the pulp to the maximum into a large pan. Let it boil on medium heat.
Dry roast the sesame seeds, allow it to cool and then powder it and keep it aside.
Once the pulp becomes thick, reduce the heat to medium low. Add rasam powder mix well.
Add jaggery also. Let it boil for 10 minutes. Add salt. Add sesame powder mix well and let it boil for few minutes. Finally add oil and let it boil for 8 to 10 more minutes.
Or once it comes to the thick consistency or oil comes on the top turn off the heat.
Now the Gojju is ready. Once it is cooled completely store it in the fridge.

Method to make Puliyogare rice:

Cook 1 cup rice.
Take a large pan, add 1 tsp oil, once hot, add some curry leaves, dry red chillies and 1 pinch of mustard seeds and allow to splutter. Now add 1 tbsp of the "Gojju" and fry for 1 minute. Now add the cooked rice, turn of the heat and mix well. Serve hot.
