My daughter loves baby potatoes in any form, so thought of making this, a bit of an experiment which tasted really yummy ....
Serves 4
Ingredients:
Baby potatoes - 1/2 kg - washed- boiled and peeled
Fresh cream - 200 ml
Thyme - dry or fresh - 1 tbsp
Rosemary - dry or fresh - 1 tbsp
Mint - fresh - 1 tbsp
Kashmiri Red chilly powder - 1 tbsp (gives only color and mild spice)
Salt to taste
Butter - 1 tbsp
Method:
Take a large bowl, put in the boiled baby potatoes, add salt and rest of the ingredients but only 100 ml of cream and mix well.
Allow to marinate for about 30 mins in the refrigerator.
Now take a pan, preferably non-stick, keep on low heat, add the butter, once it melts add in the marinated potatoes and stir fry until all the ingredients are well mixed, potatoes would become crispy and golden and all the cream starts sticking to the potatoes.
Approximate time 10-15 mins.
Switch off the heat.
Transfer potatoes to a serving dish and garnish with the remaining fresh cream.
Serve hot.
You can increase the amount of cream in the marination, to make this dish even more yummy.
