"Musthi Polo" in Konkani or Urad dal and Rice Dosa


A very famous Konkani dosa is the "Mushti Polo", or rice and urad dal dosa/pancakes.


Makes 12-15 dosas
Ingredients:
Urad dal - 1/2 cup
White rice - 1 cup
Fenugreek seeds/ Methi - 1/2 a handful
Poha or Beaten rice - 1 handful
Salt - 1 tsp

Method:
Wash the urad dal, fenugreek/methi seeds and rice well, and soak for about 3-4 hours a vessel of water.
Now drain the water and grind along with salt and beaten rice to a thick paste, consistency should be of regular dosa/idli batter.
Keep it overnight or for 3-4 hrs to ferment.
Now take a griddle or non stick tava, keep on medium heat.
When the griddle is hot,  grease it lightly with ghee.
Pour 1 ladleful of the batter on to the hot tava and spread it in a circular motion to make a dosa and cook on one side only.
Pour ghee or oil on the edges if required. Remove when the bottom is lightly golden.
Serve hot with Onion Chutney or Ginger Coconut Chutney or Ginger Green chilly Chutney.
