Holi Special - Dry fruit Gujiya
"Holi" is the festival of colors....
The best part of Holi is eating sweets... and my favorite being "Gujiyas", a deep fried stuffed Indian pastry ....
Makes 12
Ingredients:
Maida/All purpose flour - 1 cup
Ghee/Clarified butter - 3 tbsps
Oil for deep frying
For the filling:
Khova/mawa - crumbles - 2 cups
Dry figs - chopped - 1/2 cup
Seedless dates - chopped - 1/2 cup
Cashew nuts - chopped - 10
Almonds - chopped - 10
Walnuts - chopped - 10
Method:
Sift the flour and rub in the ghee till it resembles bread crumbs. The add 1/4 cup + 1 tbsp of cold water and knead to a stiff dough. Cover with a cloth and keep aside for 15 mins.
Making the filling:
Heat a non-stick pan, add khova, saute' for 3 mins. Set aside to cool. Then add dry fruits and mix well.
Divide dough into 12 equal portions, Shape into balls.
Divide the filling also into 12 equal portions
Roll the dough into puris.
Place the filling on one side and close the puri to from gujiya.
Seal the edges using your finger tips or a fork.
Deep fry till golden.
