Dish #422 - Lemon Butter Lamb Chops with Pumpkin puree


For the last couple of weeks I have been trying to create some dishes which are simple to cook, tastes delicious, is healthy, look very beautiful, .and a complete meal in itself...
This is the first of them...

Pumpkin is a very low calorie vegetable. 100 g provides just 26 calories and contains no saturated fats or cholesterol; however, it is rich in dietary fiber, anti-oxidants, minerals, vitamins. The vegetable is one of the food items recommended for controlling cholesterol and reducing weight.
Ingredients:


Lamb chops - 500 gms
Pumpkin - 500 gms - peeled and cut into cubes
Onion - 1/2 - sliced
Thyme - dried - 1 tsp
Basil - dried or fresh - 1 tbsp
Black peppercorns - 6
red chilly powder - 1 tsp (Optional)
Lemon - large - 1
Butter - 100 gms
Mint leaves - to garnish

Method:
Take a large bowl, squeeze the fresh lemon into the bowl, add red chilly powder, softened butter and salt and mix well. Marinate the lamb chops with this mixture and keep in the refrigerator for 3-4 hrs or overnight.
Take a large frying pan, add a little butter, fry the pumpkin cubes with onions, thyme, basil and black peppercorns.
Allow to caramelize, then cool and puree it. add salt to taste.
Grill the lamb chops on a hot tandoor basting it with butter or on a pan with butter or Oven on 180 degrees until done.
Serve the lamb chops on a bed of Pumpkin Puree.
Garnish with grated butter and mint leaves.
