Kasi Halwa/ Ash Gourd dessert/sweet dish - Celebrating 2 yrs of Shilpa's CookBook


Today is my blog's 2nd anniversary...
Managed to somehow find time and made this sweet dish just now, to celebrate my blog's 2nd anniversary.. this sweet dish which is very popular in Mangalore and coastal regions surrounding it.
My dad loves it, and today I realized that my husband and daughter too love it...
Easy to make dish... cannot use the word "healthy" here... cause there are reasonable amounts of sugar and ghee added to this sweet dish/dessert..
But during celebrations ..we do not count the calories....Do we ?


Serves 3
Ingredients:
Grated Ash gourd/white pumpkin - 2 cups
Milk - 2 cups
Sugar - 5-7 tablespoons
Ghee - 4 tablespoons
Green cardamom - 2 - peeled and seeded powdered
Roasted Cashewnuts - 1 handful
Saffron/Kesar strands - 1 pinch - soaked in 1 tbsp of milk
Raisins - 1 handful

Method:
Peel the ash gourd, discard the skin, grate the white fleshy part.
Squeeze out excess water and keep aside.
Take a large pan (use non-stick pan if you are making halwa for the first time), add the 2 cups of milk, bring to boil, add the grated ash gourd and mix well. Cover and cook til the ash gourd is well done and all the milk has been absorbed by the ash gourd. This would take approx 15 minutes. Further 5 mins you could stir cook uncovered to evaporate any water content.
Now add the sugar, ghee, strands of saffron/kesar, cardamom powder, roasted cashewnuts, raisins and mix well.
Stir and cook till the mixture becomes glazy and sticky.
Serve as desired.
