"Poha Chivda" or Crispy Seasoned Beaten Rice - An Anytime healthy snack

Crispy beaten rice flavored with peanuts and spices makes a delicious any time snack. This is a healthy, low calorie snack that can be eaten any time of the day/night.
Known as "Chivda" in Marathi and is a traditional Maharashtrian snack. Chivda tastes good if you make it with thin poha or beaten rice.
Beaten Rice is Fluffy, easy to digest and fills your stomach with very little quantity another benefit of beaten rice is that it is fat, cholesterol and sodium free. Thus it is beneficial for obese and hypertensive patients. It is rich in riboflavin, vitamin E, Calcium, and Magnesium.
Additional nutrition can be added to this Chivda by adding chopped onions and mint or coriander leaves and a dash of lemon juice just before serving.
My Mom used to make this very often during my childhood and we used to love to eat it whenever we felt like munching something!
Serves 3
Ingredients:
Beaten rice - 2 cups - thin variety
Roasted peanuts - 1/4 cup
Green chilies - slit lengthwise - 2
Mustard seeds - 1/2 tsp
Curry leaves - 8
Turmeric - 1/2 tsp
Salt - 1 tsp
Sugar - 1 tsp - powdered
Asafoetida/Hing - 1 pinch
Oil - 1/2 tsp
For serving if required
Onions - chopped
Mint/Coriander leaves - chopped
Lemon juice - as required


Method:
Take a non stick pan, add dry roast the beaten rice on medium heat until crisp - around 3-4 minutes. Switch off the heat and allow to cool.
Now take another small pan, add oil, keep on low heat, add the mustard seeds, curry leaves and slit green chillies and allow to crackle. Now add the turmeric powder and hing and fry for 2 minutes.
Now add this to the cooled beaten rice which has now become crispy, along with salt and sugar and mix well.
Once fully cooled it can be stored in air tight container and eaten any time of the day.
For enhanced taste and nutrition, add chopped onions, mint or coriander leaves and a dash of lemon juice just before serving.
