Ingredients:
Mangoes - 1 - peeled and diced.
Lychees - 10 - deseeded and halved
Green Capsicum - 1/2 - diced
Tomato - 1 - deseeded - diced
Spring onion - chopped - 1 handful
Apple Cider Vinegar - 1 tbsp.
Salt and Pepper to taste
Coriander leaves to garnish
Method:
Take a large serving bowl, add the diced mangoes, lychees, green capsicum, tomatoes, spring onion and vinegar, salt n pepper and toss well.
Serve garnished with coriander leaves.
