Onion Uttapam or Onion garnished Pancakes
Onion Uttapam is a famous South Indian breakfast.
These are regular rice or rava pancakes garnished/seasoned with chopped onions, green chillies and coriander leaves.
Served with Coconut coriander chutney, this is the perfect Sunday morning breakfast.
The traditional dosa batter is used to make this uttapam, but you could also use leftover Idli batter too to make the same.
Makes 10
Ingredients:
Regular rice dosa batter - 1/2 kg ( 500 ml vessel)
{For dosa batter :
Urad dal - 1/2 cup
White rice - 1 cup
Fenugreek seeds/ Methi - 1/2 a handful
Poha or Beaten rice - 1 handful
Salt - 1 tsp}
For uttapam garnishing:
Onions - 3 - finely chopped
Green chillies - 3 - finely chopped
Coriander leaves - 1 handful - finely chopped
To serve:
Coconut coriander chutney
Method:
Wash the urad dal, fenugreek/methi seeds and rice well, and soak for about 3-4 hours a vessel of water.
Now drain the water and grind along with salt and beaten rice to a thick paste, consistency should be of regular dosa/idli batter.
Keep it overnight or for 3-4 hrs to ferment.
Now take a griddle or non stick tava, keep on medium heat.
When the griddle is hot, grease it lightly with ghee.
Pour 1 ladle full of the batter on to the hot tava and spread it in a circular motion to make a dosa.
Immediately spread a little of the chopped onions, green chillies and coriander leaves evenly on the top of the dosa. Cover and cook on low heat till one side is completely cooked.
Pour ghee or oil on the edges if required.
Turn the uttapam on the other side and cook for 30 seconds to 1 minute, till its little crisp.
Remove and serve hot with Coconut coriander chutney.
