Southern Fried Chicken


Southern Fried Chicken is a mouth watering starter which is very popular all over the world.
This dish is very simple to make, but yes the ingredients may not be available in all grocery shops in India, you may have to go to big Supermarket to find the Creole seasoning and tarragon. But even without using these 2 ingredients the fried chicken still tastes yum!
You could however replace the Creole seasoning with 1 tbsp each of dried oregano and 1 tbsp of dried thyme.
Here is the recipe for the same..!!

Serves 3
Ingredients:

Chicken pieces or Chicken drumsticks - 500 gms
Buttermilk - 200 ml - to cover and marinate chicken
Plain flour - 1½ cups
Creole seasoning - 1 tbsp 
or thyme - 1 tbsp+Oregano - 1 tbsp
Onion powder/grated onion - 1 tbsp
Cayenne - 1/2 tsp

Paprika - 1½ tsp
Tarragon - dried or fresh - 1 tbsp 
Dill - dried or fresh - 1 tbsp 
Garlic powder/ grated fresh garlic- ½ tbsp
Salt and pepper to taste
Egg - 1
Oil - for frying

Method:
Soak chicken in buttermilk overnight. This helps to retain the moisture of the chicken.
In a bowl, combine the flour, Creole seasoning, onion powder, cayenne, paprika, tarragon, dill and garlic. Combine well then add salt and pepper.
Now beat the egg in another bowl. 
Drain the chicken and shake off excess buttermilk. Then dip each chicken piece/drumstick in egg and coat evenly in flour mixture. Place on baking paper and let rest for about 15 minutes.
Deep frying:
Take a deep frying pan, pour oil into it, and heat till almost smoking.
Deep fry the chicken for 10 to 12 minutes on each side or until golden brown on one side then turn.
Continue cooking until evenly brown, in total about 20 minutes.
Drain the pieces on kitchen tissue, and serve hot..!!
