Maddur Vada


A drive from Bangalore to Mysore is incomplete without stopping by in the town of Maddur to have the very famous "Maddur Vada".
Maddur Vada is also frequently sold on trains that traverse these two cities.
Maddur vada is a type of vada or snack item which is unique to the state of Karnataka, India.
This snack derives its name from the town of Maddur which is half way between Bangalore and Mysore.
This snack is easy to make, and does not need any prior preparation.
The ingredients used are almost always available in the kitchen.
Makes 10-15 vadas
Ingredients:
Maida/Plain flour - 1/4 cup 
Rice flour - 4 cups
Semolina - 1 cup
Ghee - 2 tbsp - hot
Onion - 2 - finely chopped
Green chilies - 2 - finely chopped
Curry leaves - 10 - finely chopped
Ginger - 1 inch - finely chopped
Grated coconut - 1 handful
Salt to taste
Oil for frying

Method:
Take a large bowl, add the maida, rice flour, semolina and salt and knead to a soft dough by adding the hot ghee. Add water only if required.
When the dough is almost getting combined, add the onions, green chillies, curry leaves and ginger and bind well. You could add grated coconut if you like.
Divide into 10 -15 flattened patty.



Deep fry in hot oil till golden brown.
