Bibbe Upkari (Raw Cashewnut side dish)

"Bibbe Upkari" or Raw Cashew nut side dish, is a delicacy prepared for Ugadi which is almost like the beginning of the Cashew season, and then prepared in all types of functions in the Konkani community.

Cashew nut is shaped like a “smile.” Yes, cashew nuts are good for depression, for helping to boost your moods and stabilize your thoughts.
This dish is made with Raw cashewnuts, but incase you cannot find raw cashewnuts you can use plain packed cashew nuts after soaking them in water overnight.

Serves 4
Ingredients:
Cashew nuts - 100 nuts
Gherkins or Tendli - 10 to 12
Dry Red chilli - 3
Coconut gratings - 2 tbsp
Mustard - 1 tsp
Oil - 1 tsp
Water - 2 cups

Method:
Split the cashewnuts into 2 halves.
Slice the gherkins lengthwise and keep aside.
Take a heavy bottomed pan, and keep on low heat.
Add oil, when its slightly heated add mustard, when it crackles, add red chillies and fry well.
Now add the Cashewnuts and Gherkins and fry for 2 mins.
Add 2 cups water, mix well, cover and cook for 10 mins or until the cashewnuts and gherkins are cooked well and the water has evaporated.
Garnish with coconut scrapings and mix well.
"Bibbe Upkari" is ready.
Serve hot with rice, dalithoi and other dishes on the Ugadi Menu.
