Bibbe Song (Cashewnuts in Tangy Chilli Gravy)


Here is a Classic Raw Cashewnut Spicy curry called "Bibbe Song" which is sure to make your taste buds sing.
Cashew nuts are significant sources of iron (essential for red blood cell function and enzyme activity), magnesium (promotes energy release and bone growth), phosphorus (builds bones and teeth), zinc (essential to digestion and metabolism) and selenium (has important antioxidant properties, thus protecting the body from cancer).
To reduce sodium and added fats in the diet, avoid salted, oil-roasted cashew nuts.
The healthiest form would be raw cashew nuts or dry roasted cashew nuts.
"Song" has no specific meaning in Konkani, but this dish definitely makes your taste buds sing. As this curry dates back to the time when India was ruled by the British, I guess the  educated English speaking Konkanis called this kind of dish as "Song".

This dish goes well with Puri's, Shevai (Indian rice noodles), chapatis and even rice and dal.
This dish is served in almost all weddings in the Coastal region of Karnataka during summer.
"Puri and Bibbe Song" or "Shevai and Bibbe Song" (Indian rice noodles), is a classic combination not to be missed.


Serves 3
Ingredients:
Raw Cashewnuts - 2 cups
1/2 potato - boiled
Roasted dry red chilies - 8 (or as per taste)
Tamarind - 1 small lime sized ball
Onions -2 
Oil - 1 tsp


Method:
Soak the red chillies and tamarind in water for about 15 mins or until soft.
Grind the red chillies along with tamarind and the soaked water into a fine paste and keep aside.
Finely chop the onions and keep aside.
Now take a heavy bottomed pan, keep on low heat, add oil, and fry the onions till golden brown.
Now add the ground chilli tamarind paste and fry till oil separates.
Now add 1 cup water, salt, boiled potato cubes and the raw cashewnuts and boil for about 15 mins or until the cashewnuts are soft and well cooked.
Serve hot with puris or chapatis or rice and dal.


An important tip would be to boil the raw cashewnuts separately in a cooker a little prior to frying the onions, until the 1st whistle and switch off the heat soon after. 
Reason being, raw cashew nuts dont cook so well along with the other ingredients.
