Aloo Gobi (Potato n Cauliflower curry)
"Aloo" or Potato as we all know is one of the best comfort foods. Potatoes are filling, moderate in calories, and non-fattening, and are an excellent way to ensure your continued success in eating healthy.
Potatoes are an excellent source of almost every essential vitamin and mineral.
Whoever coined the phrase "the lowly potato" certainly wasn't aware of its nutrient values. And anyone who still shuns the potato thinking it is fattening is missing out on a food tailor-made for the calorie-conscious person.
So here is another famous North Indian gravy " Aloo Gobi" or "Potatoes and Cauliflower in Tomato based gravy".
Serves 3
Ingredients :
Potatoes - 1 - large
Cauliflower - 1/2 medium sized or around 200 gms
Onion - 1 - large
Tomato - 4 - medium
Green chilli - 1
Ginger - 1 inch piece
Garlic - 3 flakes
Cinnamon stick - 2 inch piece
Cloves - 4
Bay leaf - 1 small piece ( optional)
Garam Masala powder - 1 tsp
Red chilli powder - 1/2 tsp
Turmeric - 1/2 tsp
Coriander powder - 1 tsp
Cumin seeds - 1 tsp
Oil - 1 tsp
Coriander leaves - for garnishing
Butter - for garnishing
Salt to taste
Method :
Cut the Potatoes and Cauliflower into medium pieces as shown.
Parboil the pieces in a pot of water with a little salt for abt 15 mins.
Now drain the water and keep aside.
Grind together cut onion, green chilli, ginger and garlic into a paste.
Blanch the tomatoes and puree them and keep aside.
Take a heavy bottomed pan, add oil, then add cumin, cinnamon, cloves and bay leaf till they are well fried.
Now add the onion chilli ginger garlic paste , fry well, then add the tomato puree and fry till oil separates.
Now add the boiled potatoes and cauliflower and mix well. Check salt and add accordingly.
Add 1/2 cup water, cover and bring to boil about 5 mins.
Garnish with fresh coriander leaves and grated butter.
Serve hot with Rotis/ Chapatis or Rice.
