Kane (Lady Fish) Masala Fry - Mangalore style

Lady fish, popularly known as "Kane" in the coastal belt of Karnataka, is one of the tastiest fish in that belt.
While driving to Goa on the Konkan coast, we always stop by in Kundapur in of the sea food joints, and the "Kane masala fry" which I have eaten there is something out of this world.
After several rounds of eating Kane , I somehow managed to get as close as I could to the most famous fish fry recipe in the region -- "Kane Masala fry "

Ingredients:
Kane 5 nos
Red Chilli powder - 5 tbsp
Hing ( Asofoetida ) - 1 tsp
Lemon juice - 1 tbsp
Tamarind - 1 lemons sized ball

For Marination masala mix together :
Tamarind juice got by soaking 1 lemon sized ball of tamarind in warm water
Red Chilli Powder - 5 Tbsp
Hing ( asofoetida) - 1 tsp

For the frying paste :
In a separate bowl mix 3 tbsp chilli powder with juice of 1/2 lemon
Method:
Wash Kane and remove scales.
Keep it whole. Keep or remove the head portion as per preference.
Marinate the fish in the marination masala for atleast 2 hrs.
Take a shallow pan, put 2-3 tbsp coconut oil ( u can use any other oil but to get authentic mlr taste u have to use coconut oil ), and when it lightly heats up put the fish and shallow fry for 3 mins.
Then turn the fish over, and while doing this add lil frying paste and keep frying the fish.
Add the frying paste as and when the fish is turned over
Fry till well done.
