Batata Poha (Beaten rice with Potatoes - A High Energy Breakfast)

Another Breakfast dish for those who prefer a healthy non-fat yet easy to make breakfast.
Poha or beaten rice is healthy and full of carbohydrates so keeps you feeling full and energetic during the day.
Potatoes also contain carbohydrates so overall this breakfast is full on energy.
"Batata Poha" or Flattened or Beaten rice with Potatoes is a very famous breakfast in Maharashtra. My grand aunt who lived in Mumbai taught me to make this breakfast dish.
Do not forget to add lemon juice and lemon wedges, cause the Vitamin C in the lemon helps in the absorption of Iron from the Poha.



Ingredients:
Poha or Beaten rice - 2 cups ( preferably thick variety but can also be made with thin variety)
Mustard - 1/2 tsp
Cumin seeds or Jeera - 1/2 tsp
Curry leaves - 6 to 8
green chillies slit - 4
Onions chopped - 1/2 cup
Potato - 1/2 cup
Turmeric powder - 1/4 tsp
Sugar - 1 tsp
Lemon juice - 1 tsp
Oil - 2 tsp
Salt - 1 tsp
Chopped coriander - 1 tbsp
Lemon wedges - for garnish


Method:


Beaten Rice or Poha


Boil the potatoes, peel and cut them into bite sized cubes and keep aside.
Put the Poha or Beaten/Flattened rice in a sieve or colander and hold it under running water for abt 20 seconds, then drain all excess water and keep aside.
Heat oil in a pan, add the mustard and cumin seeds, when they crackle, add curry leaves and green chillies and fry for about 1 min.
Now add onions and fry till golden brown.
Add the potatoes, turmeric, lemon juice, salt and sugar fry well.
Now add Poha or the wet beaten rice and mix well.
Serve garnished with fresh coriander leaves and lemon wedges.
